First, I must give thanks to GOD for life and bringing me thus far, as I left my home country to
travel to Barbados to attend the Caribbean Cuisine Culinary Institute.
I must say the Journey was worthwhile despite some personal struggles, which at times made
me feel like giving up on my dream to study and to become certified.
However, Chef Edey and other members of the CCCI staff helped me to overcome these
challenges and made the journey easier through their genuine interest in each student’s well-
being and the mentorship they offered.
I will leave CCCI knowledgeable about food science and so many other aspects related to food
preparation.
To my daughter, thank you for keeping me motivated!
