I am honoured to be doing this American Culinary Federation Certified Culinarian course through the Caribbean Cuisine Culinary Institute because of the emphasis that is placed on the science of cooking. A lot of pertinent information is shared in both the theory and lab sessions and our instructors always go the extra mile to ensure that we fully grasp what has been taught.
